要約

The chemical composition of fruiting bodies and mycelia during submerged cultivation of two medicinal mushrooms, Lentinus edodes (Berk.) Sing, and Pleurotus ostreatus (Jacq.: Fr.) Kumm. was studied. It has been demonstrated, that palmitoleic (16:1) and heptadecenoic (17:1) fatty acids appear as a result of submerged cultivation in mycelia of both investigated species. The mycelia of P. ostreatus and L. edodes had higher indexes of essential amino acids and nutrients as compared with fruiting bodies. A higher content of polyphenols and more considerable antioxidant activity was noted in fruiting bodies than in mycelia of L. edodes and P. ostreatus.
