AB Antioxidant activity, fatty acid composition and ultraviolet and infrared (IR) spectra of fruiting bodies, mycelium, and cultured liquid ethanol extracts of Pleurotus ostreatus (Jacq.: Fr.) P. Kumm. were studied. It was demonstrated that the extracts of fruiting bodies had higher antioxidant activity than mycelium and cultured liquid extracts. It has been estimated that the content of unsaturated fatty acids in fruiting body extracts was higher than in mycelium and cultured liquid ones. IR spectra of some biologically active substances from fruiting bodies and mycelium extracts showed that they include mainly phenolic, carbonyl, and methoxyl groups.
